Kelsey here. (Obviously haha). Well I am sitting here eating this DELICIOUSLY amazing salad that I made up a couple weeks ago and have been eating basically every day sense.. SO, I thought Hey! Why not blog this little baby so others can enjoy it too. RECIPE:
- 1/2 large Fuji Apple
- 1/2 (or 3/4) Cup red seedless grapes, halved
- 1/4 Cup grated Parmesan cheese
- 1 WHOLE avocado, diced
- A ton of Spinach
- Ken’s Steak House brand LITE Caesar dressing and marinade- (the vinaigrette kind, NOT the creamy kind).
Toss everything together then drizzle with dressing! You could use a plethera of dressings, or even just lemon juice and vinegar. However I really think this particular dressing is what makes it so freakin amazing. The dressing is SOO savory and a little bit tart, so it tones down the sweetness of the fruit perfectly. ALSOO, when I have more time I toss in some cooked quinoa or shredded grilled chicken for added protein.
